Concrete Mixer trucks have been missing from Snowrunner, they will fit right in.
Basically, you need sand, water and stone/gravel. Deliver them to a factory and there you can pick up your wet concrete with a mixer truck. Drive the truck to a location (for example foundation for a house or warehouse), where you can deliver the concrete.
If you can make it work the same as water, you can take multiple trips for
a large building or 1 trip for a small one.
Trucks:
Most of the concrete mixer trucks in Europe are perfectly capable of going offroad, they are mostly 6x4/8x4/10x4. Some brands offer 6x6 or 8x8.

If you take the DAF as an example:
- Give it the same tires as the Tatra Phoenix, double tires on the back axles
- 8x4, because if you make it another 8x8 where's the fun in that? Make it a little bit more challenging.
- Give it active suspension, most of these trucks have variable ride height anyway
